This CALABAZA salame features Long Island Cheese pumpkin, an old heirloom variety and one of our all-time favorites. We roast thick wedges until the flesh is a deep ochre, somehow both dense and yielding. Tasting it, you would note a surprising fruitiness, and we echo that with heaping helpings of Guajillo and Ancho chilies, two varieties known for their intense fruity notes ranging from bright and sweet to dark and raisiny. It’s a perfect match!
